The filling is simply tossed with cooked rigatoni that's then topped with fontina and baked to a golden brown.&lt;br /&gt;&lt;br /&gt;YIELD: 4&lt;br /&gt;COURSE: Main Dishes&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;1 pound rigatoni&lt;br /&gt;3 tablespoons olive oil&lt;br /&gt;1 10- ounces package frozen spinach, thawed&lt;br /&gt;2 cups (about 1 pound) ricotta&lt;br /&gt;5 tablespoons grated Parmesan&lt;br /&gt;1/2 teaspoon grated nutmeg&lt;br /&gt;3/4 teaspoon salt&lt;br /&gt;1/4 teaspoon fresh-ground black pepper&lt;br /&gt;6 ounces fontina, grated (about 1 1/2 cups)&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Preparation&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1. Heat the oven to 450°. Oil a 9-by-13-inch baking dish.&lt;br /&gt;&lt;br /&gt;2. In a large pot of boiling, salted water, cook the rigatoni until almost done, about 12 minutes. Drain. Put the pasta in the prepared baking dish and toss with 1 tablespoon of the oil.&lt;br /&gt;&lt;br /&gt;3. Meanwhile, squeeze as much of the water as possible from the spinach. Put the spinach in a food processor and puree with the ricotta, 3 tablespoons of the Parmesan, the nutmeg, salt, and pepper. Stir in half the fontina.&lt;br /&gt;&lt;br /&gt;4. Stir the spinach mixture into the pasta. Top with the remaining fontina and Parmesan. Drizzle the remaining 2 tablespoons oil over the top. Butter two 9-inch cake pans, then line the bottoms with rounds of parchment or wax paper. Preheat the oven to 350°.&lt;br /&gt;2. Melt both chocolates together with the 6 tablespoons of water. Use  either a double-boiler or a microwave. Stir until smooth, then set  aside until room temperature.&lt;br /&gt;3. In the bowl of an electric mixer, or by hand, beat the butter and 1  ¼ cup of the sugar until light and fluffy, about 5 minutes. Beat in the  melted chocolate, then the egg yolks, one at a time.&lt;br /&gt;4. Sift together the flour, baking powder, baking soda, and salt.&lt;br /&gt;5. Mix in half of the dry ingredients into the creamed butter  mixture, then the buttermilk and the vanilla extract, then the rest of  the dry ingredients.&lt;br /&gt;6. In a separate metal or glass bowl, beat the egg whites until they  hold soft, droopy peaks. Beat in the ¼ cup of sugar until stiff.&lt;br /&gt;7. Fold about one-third of the egg whites into the cake batter to  lighten it, then fold in the remaining egg whites just until there’s no  trace of egg white visible.&lt;br /&gt;8. Divide the batter into the 2 prepared cake pans, smooth the tops,  and bake for about 45 minutes, until a toothpick inserted into the  center comes out clean.&lt;br /&gt;Cool cake layers completely.&lt;br /&gt;While the cakes are baking and cooling, make the filling, syrup, and icing.&lt;br /&gt;&lt;b&gt;To make the filling:&lt;/b&gt;&lt;br /&gt;1. Mix the cream, sugar, and egg yolks in a medium saucepan. Put the 3  ounces butter, salt,  toasted coconut, and pecan pieces in a large  bowl.&lt;br /&gt;2. Heat the cream mixture and cook, stirring constantly (scraping the  bottom as you stir) until the mixture begins to thicken and coats the  spoon (an instant-read thermometer will read 170°.)&lt;br /&gt;3. Pour the hot custard immediately into the pecan-coconut mixture  and stir until the butter is melted. Cool completely to room  temperature. (It will thicken.)&lt;br /&gt;&lt;b&gt;To make the syrup:&lt;/b&gt;&lt;br /&gt;1. In a small saucepan, heat the sugar and water until the sugar has melted. Remove from heat and stir in the dark rum.&lt;br /&gt;&lt;b&gt;To make the icing:&lt;/b&gt;&lt;br /&gt;1. Place the 8 ounces of chopped chocolate in a bowl with the corn syrup and 1 ½ ounces of butter.&lt;br /&gt;2. Heat the cream until it just begins to boil. Remove from heat and  pour over the chocolate. Let stand one minute, then stir until smooth.  Let sit until room temperature.&lt;br /&gt;&lt;b&gt;To assemble the cake&lt;/b&gt;:&lt;br /&gt;Remove the cake layers from the pans and cut both cake layers in half horizontally, using a serrated bread knife.&lt;br /&gt;Set the first cake layer on a cake plate. Brush well with syrup. Spread ¾  cup of the coconut filling over the cake layer, making sure to reach to  the edges. Set another cake layer on top.&lt;br /&gt;Repeat, using the syrup to brush each cake layer, then spreading ¾  cup of the coconut filling over each layer, including the top.&lt;br /&gt;Ice the sides with the chocolate icing, then pipe a decorative border  of chocolate icing around the top, encircling the coconut topping.&lt;br /&gt;(It may seem like a lot of chocolate icing, but use it all. Trust me. Be warned, they are addicting!!  Recipe make 24 cupcakes.  What you'll need:&lt;br /&gt;&lt;br /&gt;1 pkg regular oreos&lt;br /&gt;cupcake liners&lt;br /&gt;&lt;br /&gt;1 pkg chocolate cake mix (I prefer Pillsbury chocolate, which has you add 3 eggs and for high altitude I add an additional 1/4 cup flour to the mix.)&lt;br /&gt;&lt;br /&gt;For Frosting:   Do not use this full recipe.  Either make it all, use half and save the rest for later, or make half a recipe.  Trust me on this.&lt;br /&gt;8 oz cream cheese - room temp&lt;br /&gt;8 T butter (1 stick) - room temp&lt;br /&gt;3 3/4 cups powdered sugar&lt;br /&gt;1 t vanilla&lt;br /&gt;2-3 T milk&lt;br /&gt;&lt;br /&gt;Add cupcake liners to cupcake pan.  Place an Oreo at the bottom of each liner.&lt;br /&gt;&lt;br /&gt;Coarsely crush half remaining oreos (I break them up by hand).  Prepare cake mix per instructions.  Add Oreo pieces to mix.  Fill cupcake liners with mix.&lt;br /&gt;&lt;br /&gt;Note:  I cook for 15 min at 350 deg even though the boxed mix instructions say to cook longer.  Not sure if that is a high altitude thing or because of that added cookies to the mix.  In any event, I suggest checking after 15 mins.  &lt;br /&gt;&lt;br /&gt;Finely crush remaining Oreos (or, if you make half a recipe of frosting, eat 3 cookies and finely crush the rest. just kidding. sort of.).  I do this in a food processor.&lt;br /&gt;&lt;br /&gt;For frosting, mix cream cheese and butter with vanilla until smooth.  Add powdered sugar.  Add milk as needed to get desired consistency.  blend in crushed oreos.&lt;br /&gt;&lt;br /&gt;Frost cupcakes when cool. Stir in 1/2 cup brown sugar and &lt;br /&gt;bananas. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes &lt;br /&gt;or until slightly thickened. Remove from the heat. Swirl in the oil, then add the chile  pepper. Saute until it begins to sizzle, then add the leek and saute  until it turns golden, 2-3 minutes. Add the clam juice, the broth and  rice; bring just to a boil.  &lt;br /&gt;&lt;br /&gt;Reduce heat and simmer, covered, until the rice is tender, about 20  minutes, do not let the soup boil. Melt butter in a large  skillet over medium-high heat. Cook for another 5 minutes.   With and immersion blender, blend until smooth. You could easily throw in a couple more pork chops and feed 6.  Cut the apples very thick as they tend to cook down into the sauce. The pork chops were incredibly tender.&lt;br /&gt;&lt;br /&gt;  6                     boneless pork top loin chops -- 1" thick&lt;br /&gt;  1           teaspoon  Mrs. Dash seasoning&lt;br /&gt;     1/2      teaspoon  pepper&lt;br /&gt;  1              large  onion -- sliced thick&lt;br /&gt;  2             medium  turnips -- peeled and sliced&lt;br /&gt;  2             medium  Granny Smith apples -- cored, peeled, and sliced&lt;br /&gt;  16                    baby carrots&lt;br /&gt;  1       16 ounce can  sauerkraut -- undrained&lt;br /&gt;  1                can  low-fat cream of celery soup -- (10 3/4 oz)&lt;br /&gt;     2/3           cup  low sodium chicken broth&lt;br /&gt;&lt;br /&gt;Spray large nonstick skillet with cooking spray. Sprinkle pork chops with Mrs. Dash and pepper. Cook in skillet over medium heat until browned on both sides. &lt;br /&gt;&lt;br /&gt;Spray inside of slow cooker with cooking spray. Combine sliced onion, turnips, apples and carrots in bottom of slow cooker. Top with sauerkraut. Place pork chops on top. Pour pureed corn mixture into a sieve over a large bowl, reserving liquid; discard solids. Add 2 cups milk, sugar, salt, and egg yolks; stir with a whisk. in a bowl, season with salt and pepper.&lt;br /&gt;&lt;br /&gt;Add grated apple, add chopped apricots, nuts, lemon zest and parsley. Mix thoroughly.&lt;br /&gt;&lt;br /&gt;On a sheet of tin foil (aluminum) drizzle olive oil, line with sage leaves and season with salt and pepper.&lt;br /&gt;&lt;br /&gt;Place half of the pork mince meat on top of the sage and make a groove down the center with your finger.&lt;br /&gt;&lt;br /&gt;Place the spicy sausage inside the groove and cover with remaining pork mince meat.&lt;br /&gt;&lt;br /&gt;Lift the edge of your foil and roll, being sure to roll it nice and  tight. lift back foil to check sage is in right place! Remove from the freezer  and allow to sit for at least 10-15 mins before cutting. I made it at Thanksgiving and it was enough for about 8  people. I did several changes and it was still yummy. I used 2 cups white flour and 1 cup whole wheat flour. I only had 2 eggs, 1/2 cup oil and 1/2 cup applesauce. I grated the zucchini with the large grate and used a little over 3 cups. 1 cup white sugar and 1 cup brown sugar. No nuts. I cooked it 45 mins, maybe should do longer.&lt;br /&gt;&lt;br /&gt;3 cups all-purpose flour&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;3 teaspoons ground cinnamon&lt;br /&gt;3 eggs&lt;br /&gt;1 cup vegetable oil&lt;br /&gt;2 1/4 cups white sugar&lt;br /&gt;3 teaspoons vanilla extract&lt;br /&gt;2 cups grated zucchini&lt;br /&gt;1 cup chopped walnuts&lt;br /&gt;&lt;br /&gt;Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).&lt;br /&gt;Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.&lt;br /&gt;Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.&lt;br /&gt;Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. In an 8 quart heavy flameproof casserole heat oil over moderately high&lt;br /&gt;heat until hot but not smoking and brown lamb shanks well in batches,&lt;br /&gt;transferring to a plate as browned. To casserole add onion, carrot, celery, and&lt;br /&gt;garlic and saute until onion is softened. Add wine and simmer mixture, stirring&lt;br /&gt;occasionally, until liquid is reduced to about 3 cups. Return lamb shanks to&lt;br /&gt;casserole and stir in broth, tomato paste, and thyme. Bring liquid to a boil and&lt;br /&gt;simmer, covered, stirring and turning lamb shanks occasionally, 1 1/2 hours.&lt;br /&gt;Simmer mixture, uncovered, stirring occasionally, 1 hour more, or until lamb&lt;br /&gt;shanks are tender.&lt;br /&gt;To make the Gremolata while lamb is cooking: In a small bowl stir together&lt;br /&gt;gremolata ingredients.&lt;br /&gt;To make the Beans while lamb is cooking: In a saucepan heat oil over&lt;br /&gt;moderately high heat until hot but not smoking and cook onions, carrots, celery,&lt;br /&gt;and garlic, stirring, 2 or 3 minutes, or until softened. Add beans, 2 cups broth,&lt;br /&gt;butter, and bay leaf and cook over moderate heat, stirring occasionally and&lt;br /&gt;adding enough remaining broth to keep beans moist and to reach a creamy&lt;br /&gt;consistency, about 30 minutes. Discard bay leaf and add half of gremolata and&lt;br /&gt;salt and pepper, to taste.&lt;br /&gt;Transfer lamb shanks to a plate and keep warm, covered with foil. Strain&lt;br /&gt;braising liquid through a sieve into a saucepan, discarding solids. Boil sauce,&lt;br /&gt;stirring occasionally, until thickened slightly. Pour sauce into a bowl and season&lt;br /&gt;with salt and freshly ground black pepper. Drain in a colander over a bowl, reserving 1/2 cup cooking liquid. Set pasta aside. Combine reserved liquid and peanut butter in a small bowl, stirring with a whisk until combined. Add the potatoes, onions and garlic; mix well. Set aside.&lt;br /&gt;&lt;br /&gt;In a medium saucepan, whisk together the milk, cornstarch, pepper and salt (if using). Bring to a simmer over medium heat, stirring frequently. Reduce the heat to medium-low and cook for 1 minute, or until the sauce has thickened. Reduce the heat to low and gradually whisk in the Parmesan, stirring vigorously to break up any lumps. Cook for 1 minute.&lt;br /&gt;&lt;br /&gt;Pour the sauce over the potato mixture and stir well. Cover and bake at 350 degrees for 1 1/4 hours, or until the potatoes are tender. (For a crusty top, remove the cover during the last 20 minutes of baking.) simple supper dish. For maximum flavor, always use freshly grated nutmeg.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;12 ounces uncooked penne pasta&lt;br /&gt;1 (10-ounce) package fresh spinach&lt;br /&gt;2 tablespoons butter, divided&lt;br /&gt;1 1/2 pounds large shrimp, peeled and deveined&lt;br /&gt;1/2 teaspoon salt, divided&lt;br /&gt;2 1/2 cups chopped Vidalia or other sweet onion&lt;br /&gt;1 cup vegetable broth&lt;br /&gt;1/4 cup dry vermouth&lt;br /&gt;1 teaspoon finely grated fresh lemon rind&lt;br /&gt;1/2 cup (4 ounces) 1/3-less-fat cream cheese&lt;br /&gt;1/2 teaspoon freshly grated nutmeg&lt;br /&gt;1/4 teaspoon freshly ground black pepper&lt;br /&gt;&lt;br /&gt;Prepare pasta according to package directions, omitting salt and fat.
